Delicate teas and yerba mate do not want boiling water. Mate is great at 140F as you can drink it right away. Green and white teas are best at 150F-160F. Darjeeling is nice at 180F.
What I always hated about boiling water on the stovetop is that it takes too long and I have to keep checking the temperature constantly.
This kettle heats to the exact degree it says it is (checked with a digital thermometer) and has the option of holding it there. The “hold temp” function heats to 3 or 4 degrees above your set temperature and then shuts off. Otherwise, it would be constantly cycling on and off and the clicking would drive you mad. Joking, as the clicking is not loud at all. Much quieter than my multicooker and rice maker.
The 1.0L version is enough water to more than enough for a small gourd of mate (refilled 10 or so times, at least) and just enough water to fill a small french press. The “hold temp” function has to be reset every time you remove the kettle from the base, but this is not a big deal. I’d rather that than the auto shut-off kicking in and letting the kettle run cold.
